One of the authentic recipes by Octaaf Callebaut that has grown into the most popular of all Callebaut dark chocolates recipes around the world, Callebaut 811 has it all. Like all Finest Belgian Chocolates, it is made from the signature Wieze blend. Whole bean roasting guarantees its rich and satisfying taste and distinctive fruity flavour.

To achieve a perfectly balanced and round taste, Callebaut 811 is blended from cocoa beans from three different countries of origin: Ghana, Ecuador and Ivory Coast.

Callebaut 811 contains a minimum 54.5% cocoa solids, 36.6% cocoa butter and is dairy free and therefore suitable for vegans.

Callebaut 811 in the block format is Kosher Pareve certified and all callets formats are Halal and Kosher Dairy certified.

The recipes in the lower range are milder and sweet with a hint of caramel. The most popular with Chocolatiers in the UK is 823 which is deep with cocoa flavour while remaining milky and smooth.

Callebaut Chocolate chips and chunks contain less fat than callets making them more bakestable for products such as cookies, brownies and flapjacks. They will resist oven temperatures of up to 200° C and perfect for bakery products that have medium or long bake times.

Calllebaut 823 is the most popular milk chocolate recipe and is used worldwide for many applications as it is suitable for moulding and enrobing, piping and for glazes. Callebaut 823 is also perfect for giving flavour to mousses, ganache and crèmes. It has a rich cocoa taste with a milky flavour and hints of caramel. Callebaut 823 is blended from cocoa beans from 3 different countries of origin: Ecuador, Ghana and Ivory Coast and contains a minimum of 31.7% cocoa solids, 21.5% milk of which 16.3% is from fat free milk and 6.2% milk fat and 34.4% fat of which 28.2% is cocoa butter and 6.2% is milk fat.

White chocolate does not contain any cocoa mass but is made from cocoa butter, milk solids, sugar and usually with the addition of vanilla. Since 2000 in the European Union, white chocolate must be (by weight) at least 20% cocoa butter, 14% total milk solids, and 3.5% milk fat.

Callebaut have developed a range of white chocolates to suit most tastes the most popular recipe in the UK being W2 which has a balanced, creamy and caramelly flavour with 28% cocoa butter and medium fluidity. When tempered correctly it produces a glossy finish with plenty of ‘snap’.

Callebaut white chocolate Velvet is the silkiest, creamiest white chocolate in the Callebaut range. Enjoy a rich mouthfeel that never ever becomes too heavy.
