Cocoa mass, also known as chocolate liquor, is made from cocoa beans that have been fermented, dried, roasted and separated from their skins. They are then ground into a smooth and homogeneous liquor (paste).
Cocoa Mass can be used to alter the characteristics of basic chocolate or a filling as it presents with a very intense chocolatey taste. Pure cocoa mass would generally be used to enhance the bitterness of chocolate.
