Cocoa mass is made from cocoa beans that have been fermented, dried, roasted and separated from their skins. They are then ground into a smooth and homogeneous liquor (paste). Cocoa mass can also be known as chocolate liquor, cocoa liquor, cacoa liquor, cacao mass or 100 cocoa.
Cocoa Mass can be used to alter the characteristics of basic chocolate or a filling as it presents with a very intense chocolatey taste. Pure cocoa mass would generally be used to enhance the bitterness of chocolate.
