Velvety smooth praliné paste fillings are one of the most popular centres for chocolates. Made from a combination of sugar and nuts (usually hazelnuts or almonds), our pralinés are ready to use to fill your chocolates, include in delicious desserts or fold into luxuriously tasty ice-creams.
Hazelnut praliné and almond praliné are the most thought of types, but why not consider something a bit different like a pistachio praliné paste or using another nut flavour? You can get even more experimental when making chocolate pralinés by aerating them to make them lighter and more voluminous or flavouring your pralinés with oil-based flavours to create your own signature taste.
As these praliné masses have little or no water activity, they are perfectly suited to the addition of crunchy or nutty inclusions because the inclusions will retain their crunchy texture for much longer than in a cream-based mass such as a ganache.
