The continuous tempering cycle in the Maestria is controlled by a custom- programmed, dedicated CPU that monitors and adjusts heating and cooling automatically within a narrow range based on the set melting and tempering points.
The working bowl is heated by the bain-marie method, the second stage (the tempering screw) is cooled directly by the refrigerant gas, and the final stage (after the tempering screw) is warmed electronically – a combination that delivers fast response times, precise control, and reduced energy consumption.
The screw pump is both reversible and removable to reduce the time and effort required to clean the machine.
This chocolate tempering machine includes a sophisticated, easy to use control panel. This CPU is simple to program, allowing you to save individual tempering curves for each different chocolate used. You can also set weekly schedules – for example turn the machine on early Monday so that the chocolate is melted when the doors open and automatically switch the machine off when you are due to finish. This chocolate tempering machine with its 40kg capacity working bowl and wide array of accessories is a cost-effective workhorse with moderate to high production volumes.
An enrobing section can be added on at time of order or can be retrofitted at a later date should production needs change.
