The term Chocolate Callets was originated by Callebaut to describe their easimelt small chocolate pieces, which are mostly used by Artisan Chocolatiers in the UK. Callebaut dark chocolate callets are formulated for melting, tempering, moulding and enrobing rather than baking.
Callebaut milk chocolate callets are suitable for use in tempering machines large and small as well as microwave and hand tempering.
Callebaut milk chocolate flavour notes vary between slightly bitter, with a touch of sourness, with fruity hints, with hints of nutmeg or even with a touch of sweetness.
Milk Chocolate ingredients usually contain cocoa solids of between 30% and 55% although some single origin manufacturers use a higher percentage in their brands.
