Sorbitol is a type of carbohydrate called sugar alcohol, or polyol and contains one third fewer calories than sugar and is 60% as sweet. Sorbitol provides sweetness, texture and moisture retention when making ganache, crémes and fondants and is particularly helpful in liqueur centres because of its low viscosity compared to sugar or glucose solutions. Sorbitol does not mask flavours and assists with good flavour distribution.
