How to use Luker Chocolate’s vegan couverture chocolate
These lovely Choco Oat M!lk chocolate drops temper in the same way as any true milk chocolate. That means, if you’re using a tempering tank, heat it to 45C and then seed down to around 29-31C, and, if you’re using any other method, you can do your thing with confidence!
Once your chocolate is tempered you can use it for desserts, moulding, dipping, licking, and all other chocolate endeavours.
Is couverture chocolate real chocolate?
Couverture chocolate is usually referred to as ‘real’ chocolate because it’s made of one key ingredient: cocoa butter. Some brands use vegetable oil instead of cocoa butter, which means it’s chocolate, but not quite couverture. To qualify as couverture, the product must contain a minimum of 31% cocoa butter.
