Colac stabiliser for ice cream and gelato will improve both the structure and the firmness of your product. It is the ideal solution if you suffer from ice crystal formation or if your ice cream is difficult to scoop. In addition, Colac stabiliser contains milk proteins and has a very refined taste, so that the flavour of your ice cream or gelato is accentuated even more. Dosage: 10-15g per 1L mix.
