After much research Callebaut discovered the Chufa plant, a member of the sedge family and found in the Eastern Hemisphere in places such as Africa, Southern Europe, India and Madagascar. The addition of the Chufa plant helps to create the rich and creamy mouthfeel.

Callebaut NXT milk chocolate is vegan, dairy free, soya free (made with sunflower lecithin), lactose free and gluten free and can be used in the same way as conventional chocolate. Melt to 45° and then seed to 30°
