The FBM PRIMA is the smallest continuous
tempering machine manufactured by FBM with full electronic control
(dimensions mm 450 x 510 x 1200 h).
This tempering machine is aimed at the
smaller chocolatier, beginners or hotels and restaurants who need smaller
amounts of continuously tempered chocolate.
The Process
As with most other FBM tempering machines,
the PRIMA is also controlled by a CPU control panel via a keyboard where
all the working parameters (temperature and melting time) can be set.
Heating, tempering and cooling are achieved
in the chocolate bowl, which has a capacity of 7kg. The chocolate is
heated by the bain-marie process, with temperature and melting time
electronically controlled by the CPU control panel.
The machine will indicate when the
tempering process should begin - the tempering cycle is controlled
directly by the user, through the electronic CPU board (its inner timer
allows temper to be maintained).
Cooling is automatic achieved via the inner
cooling compressor and closed circulation of liquid in a cavity wall. The
CPU board will control the heating process when the set tempering time has
elapsed.
The standard melting/tempering cycle takes
around 45 minutes, but if supplied with melted chocolate the machine can
complete the cycle in approximately 15 minutes.
