Water Cooled Tempering Kettles

Bench Type standard unit suitable for melting and tempering chocolate or compounds used for enrobing, moulding and dipping.

  • Drive motor with reduction gearbox, driving an agitator shaft and removable multi-bladed scraper mechanism. 

  • Water jacketed internal tank

  • Electrically heated, thermostatically controlled.

  • Remote thermometer indicates temperature of chocolate.

  • Externally insulated and metal clad

  • Top entry chocolate filling aperture with cover. 

  • Constructed in steel and aluminum. 

  • Free standing.

  • Tempering cycle thermostatically controlled. 

  • Cooling water controlled by automatically regulated magnetic valve. 

  • The discharge valve for the chocolate is electrically heated to prevent hard chocolate build up.

Compressor Cooled Tempering Kettles

Twin & single models with Compressor cooling. Twin models can be equipped with separate stirrer motors & controls. 'E' models can be accurately pre-programmed.

The units are free standing and suitable for melting and tempering chocolate or compounds used for enrobing, moulding and dipping.

Drive motor with reduction gearbox, driving an agitator shaft and multi-bladed scraper mechanism. 

Electrically heated, externally insulated and metal clad, top entry chocolate filling aperture with cover. Constructed in steel and aluminium. Free standing. Tempering cycle thermostatically controlled. Compressor Cooling controlled by sensor.

The discharge valve for the chocolate is electrically heated to prevent hard chocolate build up.

Working Procedure

  • Fill with chocolate block or buttons

  • Set thermostat to 45°C. Chocolate will melt automatically.

  • Switch on the stirring when chocolate is liquid.

  • When chocolate is at 45°C, set thermostat at 31-32°C.

  • Press the black Automatic Tempering Button. The chocolate will automatically be cooled and reheated to operating temperature. 20 minutes later the chocolate is ready for use. The temperature will hold for hours or until the kettle is refilled with solid chocolate.

Low Maintenance

The 6T model is manufactured to require very little maintenance, as are most ChocoMa models. On this machine:

  • The compressor is oiled for life

  • The gear is oiled for life

  • The motor is oiled for life

When required, the exterior may be cleaned with mild detergents and hot water. The interior should be cleaned with hot water only as the slightest amount of detergent will affect the taste of the chocolate.
